    Is it possible to take out the following the components of your kefir culture so that it doesn't produce ethanol, diacetyl, and acetyl methyl carbinol?

    1. Streptococcus Diacetylactis produces diacetyl.

    2. Leuconostoc Cremoris: produces diacetyl and acetyl methyl carbinol.

    3. Saccharomyces Florentinus produces ethanol (alcohol)

    In your Helios product you put in Candida kefyr, Saccharomyces Unisporous which are yeast strains which are used for alcohol production.
