UV mapping is how the polygons that make up an object are laid out in 2d to be textures(drawn on).

Yes, Cheetah makes it pretty easy. Go to cheetah3d (dot-com) and check the forums. There is a tutorial thread stickied.

If that doesn't work out I can make a video.

Easy, not really. Cheetah 3d is about as easy as modellers get, IMO, but it sounds like you should head over to the cheetah3d (-dot-com) forums and read some tutorials if you need a full intro to 3d. Good luck, and I really can't recommend starting with Cheetah 3d enough. It covers the all the basic needs (UV/Painting, Skeletal animation, FBX format support, animation) and may actually be all you ever need no matter how good you get. Plus the price is amazing.
