ah yes...lees is lovely isn't it? i love viognier....hopefully we'll make some soon. just pinot noir, syrah, zinfandel, and chardonnay so far. have fun!

I wonder if you could put that sludge in a bottle and store it in the fridge in a bottle so you can use it again.
