  • The spices aren't exactly necessary. My dad's maqluba is made is with just salt and pepper and its delicious!

    I need to do some spice substitution ( I have most Desi spices). Thai 7-spice would cause me trouble, as would "mixed spice" I do have Zayd 7-spice (Alspice, Black pepper, Cloves, Cardamom, Cinnamon, fennel, and ginger.)

    Hope you can help me here caz I can't wait to make this dish (and I'm thinking yoghurt on the side!!!!) Num Num!

  • salam all if u want a authentic maqluba try useinf lebanese seven spice this give u the traditonal arabic and palestinian taste to the dish u can get this spice in mose arabic grocerys and sum uk supermarkets but love this video ur soo funny :)

  • traditionally maqluba is made with either potatoes, eggplant, or cauliflower but not all together cuz it over whelms the taste, but still great dish love u titli!

  • @trappedinamadworld It's not totally necessary, no. But if you have some lying around or can borrow some from a friend it adds a nice flavour. Chinese 5 spice would work too.

  • start with a meat ragu - then you have bolognaise,chilli,lasagne and cottage pie ? Or roast a chicken, - roast dinner,pie,flan & chicken with pasta.

  • BRAVO AND HATS OFF! The maqlooba i do often falls down and doesn't stay up, now i know why! It's the layering that I didn't get right. I LOVE MAQLOOBA! and I like to sprinkle fried pine nuts and almonds on top of the whole thing. :)))) Titli for the win!

  • Topsy Turvy food. I like your brain.  This is your brain on drugs. This is your brain in peanut oil at 450'F. This is my aubergine dipped in salt. 3 Buffalo gals go brown the outside. Cover the chicken with your brain, and simmer at the pub while soaking. Take out your chicken out with your yellow hands, and leave the pub. Put everything to bed, and add your liquid. Heat for 45, uncover, then cover, then upside down, tap it, leave it for 5 minutes, then lift slowly. Serve raita.
