  • This is different than the way I make it. I add red pepper for color and I NEVER put a spoon in the epis because then it will start to smell.

  • @Lstlouis777 * 6 Scotch bonnet peppers * 2 cups thinly sliced or shredded cabbage * 1/2 cup thinly sliced or shredded carrots * 1/4 cup thinly sliced or shredded onions * 4 whole cloves * 1 teaspoon salt * 8 to 10 peppercorns ( optional ) * 3 cups vinegar

    Instructions:

    Snip off the stem of the peppers, cut each into 4 pieces, and keep the seeds.

  • @Lstlouis777 Place hot peppers, cabbage, carrots, onion, cloves, salt, and peppercorn in a quart size jar. Then add vinegar.

    Close jar tightly and let sit at at least 24-48 hours before serving.

    Serve with meat or fish

  • @OMANI91 Its a base used in all cooking we put it in rice, meat and veggies. It gives that distinct Haitian flavor to all our cooking.

  • You welcome. Lol do not put in a lot of it into your dish because these spices are really fragrant and strong spices.They will quickly overpower the taste of your food. Trust me i learned that the hard way. So you can but between 1-4 teaspoons to what ever dish you're cooking. With Haitian food there is not exact science. Just add in how much you are comfortable with for a particular dish. Hope that helps.

  • I have been trying to find ANYONE who could help me understand Haitian Cuisine. Is this some sort of secret??? WHY do Haitians keep their DELICIOUS food so guarded??? I want to learn how to make this type of food but I cannot find a good source of recipes to make this type of food correctly. Can ANYONE PLEASE HELP ME????

  • This recipe is nice, and I do believe MAJORITY if not ALL Haitian American girls need to take notes. BUT she needs to show how to make "Pen Sho" and "Patte'"..trankslation: haitian Patti and Haitian bread! If I find a Haitian girl that can cook those two things in my age range, I WILL MARRY HER and give her money every week to make me those two things every Sunday after church! AMEN!
