  • Am I correct in thinking that provisions are the "seasonings", the spices and vegetables that are added to dishes, like tomato's, peppers, thyme, etc......

  • @MsONatural provision is like yams, potatoes, plantains, banana, mainly starches that are native to the west indies, and starches that you could typically put gravey on and have as a meal.

  • I usually cook the seasoning in a little vegetable oil then add stripped herring to the pot.

  • You're supposed to cook it! That might be the way you "normally" do it but it's not how they do it in Trinidad!

  • @alananj1 You don't have to cook it. And it is quite normal to do it this way in Trinidad...my Grandmother has been making it this way before this guy was born. However...we boil it a bit in hot water to take out some more salt.
