Hi Jeta, I had a question. On the soy sauce, can it be the Kikkoman naturally brewed soy sauce or is it another kind of soy sauce that I can find in my local supermarket, I would really like to know, thank you.
It depends upon the quantity of your Bihon, water level and the degree of your heat, but you have to check from time to time until the Bihon is HALF tender. Just remember: DO NOT OVERCOOK the Bihon. Thanks for the comment.

i can't imagine the pancit bihon with ginger parang unique masarap din ba na may lasang luya kasi ako palakain din ako ng luya lalo na sa paksiw na isda di ko sinasayang yan at sa lutong tocho or tosho sa ibang bigkas na talagang kailangan maraming sibuyas at luya pero sa pancit bihon ewan lang pero i try ko rin nga lagyan ng luya para malaman ko for the first time na may kasamang luya ang pancit bihon

Mixing pancit bihon with ginger is good but you have to chop it finely or mince it. Thanks for the comment.
