One question...You did not mention the amount of onion to use in your video...You mentioned 1/4 cup each of the vegetables...But you used much more onions than 1/4 cup...
Indian cooking is all about eyeballing. You can add/omit vegetables according to your preference and also you can increase/reduce amount of vegetables according to your preference...so however you make, you will sure get authentic dish...enjoy! You can also visit website for written recipes...

I just eyeball. I add till my curry color changes from red to orange. So it really depends how much you making. If you are vegan use soy cream and tofu instead of paneer. Enjoy!

Heavy cream is kept by milk section not in frozen section. But If you can't find heavy cream, don't worry at all. Add little bit of regular or skim milk to little bit of corn starch or arrowroot powder and add in your curry. These days, I add only nonfat milk powder to all my punjabji curry. It taste great with milk powder. You don't feel heavy after eating curry made with milk powder. Enjoy!
Hello Bhavna. Love your wonderful recipies. I am wondering what ratio of onion to tomato do you use for your dishes. It looks like almost equal amounts of onion to tomato.
Not really equal, but I use actually 1/2 onion for 1 tomato. But when I make onion paste, I add nuts as well. So it looks almost same ratio as tomato. But it's infact 1:2 onion:tomato

However, can you help me understand one thing? What ingredients cause water to be absorbed when it is added in (both in the first cooking and later in heating it up in subsequent days)? Is it the tomato puree that does that? Or is it the onion paste you made?
If it's not the tomato puree, what's the purpose of tomato puree? Is it just for the tomato-taste?
If I have understood your question properly then water is absorb by all ingredients. Onion, tomato everything is used for taste and texture. Hope this helps, if not feel free to ask.

It might be possible b/c of certain vegetable otherwise it shouldn't taste bitter. But next time try using fresh tomato sauce homemade preferably or just use fresh finely chopped tomatoes. Paprika doesn't taste bitter at all. Infact it has great flavor combination of sweetness and unique mild hot taste. But feel free to ask me again.
hi there.. just saw your query while watching bhavna's video. the bitterness you had was not due to the tomato puree but the fenugreek leaves. Sometimes it just tastes too bitter. Next time try using less of it or avoid completely. Hopefully it shouldn't be bitter then. Good luck : ) ...
@achtzen18 hi... i had same experience while making some punjabi dish... neways i dont think the problem is due to tomato puree but as per my experience it happns due to the HEAVY CREAM for sure... and the best way to resolve this issue is to add some enough sugar in it. @achtzen18 thanks! i wonder why kasoori methi or fenugreek leaves are added to punjabi dishes whenever iadded it just tastes so bitter even though i add heavey cream to balance out.
@simrajain2 I live in the UK too and had bought some fenugreek leaves but they were very mildly bitter. For a moment I thought they were methi leaves at all. Actually kasoori methi gives a very nice flavour to food. It is not the same as the common methi leaves we get. You should be able to get kasoori methi at any indian gorcery store. Infact I once saw Tesco selling it but it was a huge packet.
Anyway, getting back to it... don't use large quantities of kasoori methi in your cooking. A recipe that serves 4 should do with just one teaspoon and it will still be flavourful. Make sure you store your kasoori methi in an airtight container so as to stop it from losing its aroma over time.

Questions and doubts are not silly at all. Questions and concerns reflects the curiosity of a person. I always love to discuss about any questions you have about cooking. It also helps me to learn more. Now coming to point of difference betn paprika and red chili is paprika is made by grinding dried, aromatic, sweet red peppers, usually the Tomato or Bell pepper. and red chili is made by grinding red hot chilis. So basically, paprika is very mild and red chili is hot.
