I have both the hand capper and press, and I find the press harder to use unless you bolt it down. I prefer a hand capper as it's faster, and makes a better seal. I'm not sure what kind of hand capper that you had that can over crimp a cap.
I've just found that there is more margin for error/slipping when you use the hand-held version, and I can really get into a rhythm and crank out a lot of capping with the table-top version.
