@Manjulaskitchen so if its hard and crispy that means we cooked it for too long? because i had the heat on med-high.. and everytime i try to make puri or roti it turns out too hard/dry/crispy and the inside is really dry
@lub783 i think you are letting them fry for too long. you are cooking out all of the moisture in them, making them crispy. maybe serve a lettuce salad inside them if they get crispy! that sounds yummy to me.

I tried Both Atta and Meida .... and somethimes both together (Half and Half) but the best result was with only using Atta .... and also make sure the Oil is so hot that the smoke is coming out Enjoy!
Whole wheat flour works best, especially the kind you can get at East Indian grocery stores. But I don't hesitate to use common white flour in a pinch.

I noticed that you use no yeast and yet the dough puffs up like magic. Is it because you make the dough soft? And is it necessary to use wheat flour? Can you use what you have on hand, like all-purpose flour? Will that affect the taste?
you can use white flour but get the "better for bread" or "self rising flour" also once out of fry pan you can put ghee (clarified butter) and then sprinkle a tiny bit of salt on them. Or you can sprinkle cinn and sugar for a dessert puri :)

Great vid. I'm no expert but our Asian food is very unhealthy. We should be looking at alternative ways for cooking our food by baking or grilling. I know its hard to make a puri without frying it but I'm sure a master chef will show us one day. ta 4 posting :)
