It really burns me up that modern bakeries and diners are exchanging flavor and tradition for convenience and cheapness. I'm looking to make this cake for my birthday but I can't find coconut cream anywhere and im thinking of making my own coconut extract because the store bought ones are artificial.
@Jacob1986 He says in part 2 after he makes the coconut milk/cream, that like all the other coconut products you have about a week in the fridge and about a month in the freezer.

i saw this episode in september '08 and have been on the lookout for a coconut cake worth buying (because it's too much effort to make alton's version on my own). it's now january '09 and i haven't found one yet. WAH!
I made this cake today. A lot of work. A week's worth. The results are worth it. However, I won't be making this again probably until Thanksgiving or Christmas. LOL.

@playful1510 Nope, Ma Me was his grandma. She appeared in 'the dough also rises' and 'it's a wonderful cake'. She passes away awhile ago though.
