So it is basically putting the stick away then pulling it out while walking back with Z focus? That makes you sort of clip to the event that should actually activate the owl, but doesnt then

It makes you glide on the ground oddly instead of walking since Link is busy constantly switching out items... so if you do it correctly over the whole part of the ground that triggers the owl then you skip the trigger. If you miss a frame then Link will be in walking mode for 1 frame and you'll trigger the owl

Can anyone explain to me how TAS works? I hear about it constantly but it is never explained anywhere.

Basically, TASes are runs done using emulators, which imitate a console, and a corresponding ROM for the game. The emulator has features such as slowdown, savestates (save everything, anywhere), and frame advance, so every action can be made perfectly, and if it goes wrong, you just load to a few frames earlier and do whatever from there. Then this is made into a video.

Nothing is "TAS only". This is possible in real time, but requires very precise button pressing. Also, it's possible with a stick/sword too.
