I don't think they're actually sad, it turns out their w-shaped pupils, which give them that sad or angry appearance at first glance, allows them to see polarizations of light. They can also use their skin to communicate with others with polarized light. wicked cool stuff for biologists.
If you don't watch carefully it looks like the light's changing or something. Those brown marks that appear on the cuttlefish's face and tentacles are it changing color.
When did Mote get cuttlefish!? They didn't have any last time I was there :/ Maybe they were down for maintenance or something?? What a bummer. I guess that just means I'll have to go again!

yup. They're cephalopods, same class as octopuses, squid and nautiluses, which are all mollusks.
