The reason it went so far out of the water was due to the momentum it had built up. Most sharks would move in below their pray, and just build up speed as they approached, which would make for a more effective killing, reducing the chance for its prey to evade.

the reason he jumped in the air was to knock the seal out when he re-entered the water (kinda like a body slam)...notice how he goes in head first (aka Seal first)...that way he can leisurely enjoy his meal without the seal trying to escape after they re-enter the water
