Actually you can hear it if you go to his actual website. The video has speed setting and audio setting so you can filter out other sound(song) and just listen to guitar picking

Yeah he covers (lessons) a lot of different songs with different sounds. I would bet he has some sort of guitar processor like Boss GT-8 or something. You can get a lot of different sounds from them if you know how to use them.
