  • Just a thought, at the part where he adds the olive oil to the pan and tells us to heat till it starts to smoke, he needs it really really hot, I heard that olive oil is toxic at high temperatures (smoking point) so I tend to use peanut oil for a higher smoke point frying, peanut oil also has health benefits too.

  • @crax4dan Peanut oil is for starchy things like potatoes. Olive oil is no more toxic at room temperature than at it's boiling point, so whoever told you that/wherever you heard that from is wrong. Also, olive oil has 10x the health benefits of peanut oil, so whoever told you peanut oil has more was wrong as well.

  • @italianXnightmare Cheers, i did some research shortly after i posted that comment, and realized that a good quality olive oil is fine at high temperatures. Makes me happy that all i have used in my life is olive oil :)

  • To all those scared of the alcohol:

    Alcohol boils at 75 celsius, the alcohol steam goes into the air... you'll get more alcohol in you while you're cookin this than eating it. Besided, half a glass of wine split on 4 people? You all see the sauce boil, water boils at 100 celsius which is higher than alcohol. Again, there's no alcohol left in this once cooked.

    If you're underaged then use white grape juice, NOT from consentrate!

    It's not like you're letting it sit there and smoke. You get it to a light smoke then throw your crap in, essentially lowering the temperature.

  • @CaitiffFTW I don't drink or use alcohol either. It's been recommended to me many times to just substitute white wine for vegetable or chicken stock and red wine with beef stock (or don't substitute anything and leave out wine all together). It won't be the same exact flavor but in my experience everything still comes out great!

  • Just tried it with scallops & shrimp over some (frozen) garlic bread and it was SOOOOO GUUUUUUD. The butter really made a difference. I used dried parsley since that was on hand, but I'm sure the dish wouldve been more fragrant if I used fresh, so I'll try that next time. U rock chef! MMUUAH!

  • My madre puts scallops in ceviche!! She soaks them with fish in lemon juice overnight and then adds the cucumbers and other veggies!! I love it!!

  • here in mexico we eat non-cooked scallops, you might think "OH GOD, THAT´S DISGUSTING" but its not, we just season it whit lime juice, chili sauce and salt =D

  • @princesahp I don't live in Mexico but I've had that, too, and it's good! I live nearby Mexico and l've noticed that lots of things (like slices of jicama, mmm) are eaten with chili sauce, lime juice and salt lol.
