Check you music history. Josquin Des Pres lived from 1450 to 1521 AD. Gregorian chant had been out of vogue for 300 years! He often used Gregorian chant, but in an entirely different way. Compare this with Hildegard von Bingen. You will hear clearly established rhythm, made possible by the new precise rhythm notation system by which each note gets an individual value. Even isorhythms had been abandoned by then. That is why it sounds so modern!

I love Gregorian especially when they sing to the rooftops, almost blowing those rooftops off and it travelling and wafting higher than clouds above. With a bit of mist above there too for cosiness.
