actually, just scald the cream with other ingredients. Boom the gelatin in cold water 3:1 ratio. melt gelatin after bloomed in microwave or in hot water bath. Mix the two together, then chill and set in a mold. Gelatin melts at 86 degrees, sets at 68 degrees.
Im going to flavor it with melted chocolate and some coffee flavoring, with fresh macerated raspberries and a raspberry coulis in baking class for my final.
