You are only bringing up canon. These shippings are ALL fanon, and a lot of the time these shippings become popular through fanmade material like shipfics. Trixie only appeared in one episode, and her personality is not yet fully developed. There have been a lot of fan material with Trixie in it, giving her a more pitiful personality. If you can see her as a more pitiful pony, Twilight, who is a tolerant and loving pony would fit very well with Trixie.
