  • @KofykatKashyap from what the other comments are saying and the way the recipe is made I'm guessing you can it's probably just added for flavor so u could just eat it like that or use some vegetarian replacement for anchovies ^_^ *sorry if this doesn't help you*

  • This reminds me of how I make my miso soup~ (different steps, but similar ingredients!) I always make miso soup with (1) nappa cabbage, (2) potatoes, (3) tofu and (4) onion :)

  • @erosamuk no, shiitake mushrooms will add more flavor to the broth. Great idea!

  • the soup looks excellent, and i'm looking forward to making it soon. but i'm curious to know if you have heard anything about this idea that boiling miso destroys the good bacteria it contains. so, from what i understand, all the ingredients are added to the soup pot and cooked first, then the miso is stirred in toward the end, and the soup is allowed to only simmer for a few more minutes to evaporate the alcohol used as a preservative in the miso.

  • I have been enjoying this, especially of late. Today I made cheonggukjang jjigae, and it was good, though I will change a bit next time, but it seemed too thin. I do not know how much cheonggukjang to use. I used about 2 T for one small dolsot dish. Also, do you think using baek kimchi is just as good as regular cabbage kimchi in recipes? Maybe add some more pepper?

  • @Lukychrm42 yes, you can add kimchi or baekkimchi to cheonggukjang stew. Next time, use at least 1/4 cup-1/3 cup.

  • Hi maangchi. I would like to ask you if soybean paste and hot pepper paste have a high salt content or if they added msg or ajinomoto to make the paste delicious. I need to cut down on my salt intake as per doctor instruction! Let me know as I wanna cook using ur recipes!

  • @thesha1000 You can use less soybean paste. I think you don't have to worry about MSG in soy bean paste.

  • @roskandy after blanching, I rinse the cabbage. Check the written recipe on my website. Thank you!

  • My guess is to rinse off the strong cabbage odor out after boiling it so the end soup will have a milder taste. This is what I noticed anyway when I tried it.

    Try smelling it before rinse & after then you will agree too.

  • is it ok if the green chili pepper was not used? Also..... is corn flour the same as all purpose flour?

  • @shinigamifall yeah, it will still be delicious without green chili pepper. I would not use corn flour, why? I don't know. I think it may ruin the flavor of the soup.

  • I used the flour for making bread instead.... i didnt have all purpose flour but it turned out good =D it would have tasted better with the green chili probably... =) but the soup was good!!

  • 3:54 I think I know. It's like kneading. The flour and the cabbage and all the other stuff blends together in flavor and then (sorta) ferments. If you don't do it, it would be "raw."

  • Where do you get dried anchovies? Most stores I go to only have oiled canned anchovies, which are too oily, and far too soft to use in most recipes.

  • I always get dried anchovies at a Korean grocery store. Check the ingredient section on my website, please. The anchovies in oil is not used for making good stock.

  • Kimchi pancake is one of my future recipes, but I will give you this recipe. It's too easy.

    Mix these ingredients in a bowl:

    1 cup of chopped kimchi, 3 tbs of kimchi juice, 1/3 cup of flour, 1/3 cup of water

    Heat your pan and put some vegetable oil , and cook it.

    This ratio may not be exact, but hope it works. Let me know the result.

  • The Song is from a korean drama called Dae je Guem (The Jewel in the Palce) which was later translated into many languages and also made into a cartoon for children, I reccommend that you google it and watch it, it's very gooD!!~

  • Yea! It always makes my day when you post a new video. I love cabbage so I will try to make baechu doenjang guk soon. I made sujebi today. I had trouble with the hand stretching the dough, so I used a rolling pin to get it started. Then I finished stretching the noodles by hand. They were delicious. I took some to work and gave them to my boss. I will find out tomorrow if she liked them. Thank you very much for taking the time to make your videos. Susie

  • Hi melonbarmonster, it's pretty easy to get dwenjang in Scotland. You can find it at most Asian markets in places like Glasgow and Edinburgh...even in the lovely wee shop in Inverness! I have some, too. LOL!
