  • I made this dish for Thanks-Giving last year. It is awesome, I made my own gravy with Braggs amino acids and flour in the skillet, I didn't wrap it in the covering, but sliced it at an angel and poured the gravy over it and sprinkled with tyme. It tastes fantastic. Even the children were going back for seconds! I needed to rewatch it this year to do it again. The book on the counter with the big V is an excellent book! Any true Vegans will really enjoy this recipe and it was so much fun!!!

  • @kat72690 no gluten flour is a raw flour protein and when cooked it becomes a rubbery meaty texture

  • Is it possible to prepare this in advance and cook the next day? Or could I cook it the previous day, then just reheat it in the oven on Thanksgiving? I'd like to make this to bring to my family Thanksgiving dinner but need to prepare my dishes in advance.

  • @erinnn222 I do not know. if you make it the day ahead and then cook it on thanksgiving and it works (or not) let me know, I have never try this idea (clever idea, should work).

    I would be careful about the reheat idea with it being hard to cool and reheat to be safe to eat.

  • isn't phyllo dough made out of butter and flour? wouldn't that make the turkey dish just vegetarian and not vegan?

  • I have tried today but problem is it taking too much time. Tell you some secret tip about how we Mandarin Chinese people doing this. We also love flour as Northern part of China, we have a lot ideas about how to save time and cooking better. Just cut it to small pieces, use oil and fry them will be only need 5-10 minutes, good luck.

  • Just wanted to add you're lucky being able to buy the wheat gluten in stroes in the U.s. I'm in the U.K and there are only 3 online stores that sell it.

  • thanks for posting this. I want to go meat free but my kids love roast dinners. I have a seitan 'roast' in my slow cooker right now. Its my first time making seitan. I worry about the boiling part though, may have to but a steamer insert for my stock pot i'm worried about the water getting too hot.

    I think its a lovely thing to do, prepare a cruelty free roast for your loved ones by your own hands

    I'm wondering about steaming seitan, instead of boiling or simmering it. Is there any reason why this wouldn't work? I'm assuming it would be a preferred way to make it.

  • I myself steam most of of my seitans these days. I haven't tried this recipe steamed, but I can tell you that it's really good boiled.

  • I have baked seitan that is only an inch thick, so Im not sure about something that big. Maybe you could bake it in a covered casserole dish with liquid.

    My question is, can you deep fat fry it?

    Maybe we shouldnt go there.

  • dood. There's a reason "seitan" is spelled very much like "Satan"...

  • you say that seitan has loads of protein but it has a very low PDCAAS (Protein Digestibility Corrected Amino Acid Score) ... meaning it's not really so great.

  • Many scientists have raised critical questions on PDCAAS's validity.

    The fact that 4 proteins, all with different amino acid profiles, receive identical scores of 1.0 limits its value as a comparative tool. They have different compositions, they perform differently in the body and should have different scores. In short, this method has no distinction of their performance relative to each other because after they pass a certain point they are all capped at 1.0 and receive an identical rating.

  • PDCAAS  is low value since human diets almost never contain only one protein; hence, calculating the PDCAAS of a protein based on an individual protein constituent is useless because one type may provide an abundance of an amino acid that another lacks (meaning that the PDCAAS of the diet is higher than that of any one of the constituents). To arrive at the real result, all individual amino acids would have to be taken into account. so the PDCAAS of one constituent is largely useless.

  • For example, grain protein has a PDCAAS of about 0.4 to 0.5, limited by lysine. On the other hand, it contains more than enough methionine. White bean protein (and that of many other pulses) has a PDCAAS of 0.6 to 0.7, limited by methionine, and contains more than enough lysine. When both are eaten in roughly equal quantities in a diet, the PDCAAS of the combined constituent is 1.0, because each constituent's protein is complemented by the other.

    What are your thoughts about the digestibility / bioavailability of wheat protein? (I believe this is referred to as "biological value" ?) What do you think about this BV concept?

  • I believe that BV comes back to the same issue of attempting to evaluate a protein based on its separation or single application in a diet, and that a protein's value needs to be understood in the context or complexity of a person's or culture's diet. Rice and/ or beans are the simple example of this.

  • I'd love to have something like this work out for me, but my experiences with store bought seitan were pretty disappointing. I found the taste and texture fairly weird and unpleasant. Has anyone had better experiences with homemade seitans and simulated meats?

    Usually I'm pretty happy without these sorts of foods, but it'd be great to have something that works for "turkey dinners" and vindaloos.

  • Randomly, I've just recalled having a stuffed pastry with gravy on top as a vegan option at a wedding and it was actually quite nice. This might be a good alternative to turkey for other folks like me who are worried they might not like the turkey loaf above.

  • i can at least understand where a meat-eater is coming from when she has contempt for vegans' animal rights values. i disagree, but i understand the position. but to show contempt for somebody's LIKING a certain food? i don't get it. i loved the taste of meat when i ate it, i love seitan as much as i ever loved any meat, and i seriously doubt that our enjoying the taste of this food is a good reason to be contemptuous of us.

Also, can i bake the "turkey" without boiling it first? And if so, how would that work in terms of time and using the cheese cloth?

  • I have used a tea towel for the cheesecloth.

    I have omitted the yeast flakes from time to time with no ill effect.

    If you bake it, use a pan with a tight fitting lid and put some water in it.

    Cooking time will be about the same I guess. I would bake/cook at 300F.
