This is a traditional Cambodian dance. That is why it looks so messy. It's better perform by the people who know how to do them. Ask the Khmer Thai in Issan I'm sure they gladly help out.
This is what happens when traditional dances are performed as an exhibition for tourists. The real meaning is taken out--it's too bad, but it's just what happens when tourists are on the scene.
You will really enjoy it. Depending on your age and gender, and your interest in being with a real family. I recommend some 'touristy' stuff like this--but generally avoid going to too many things like "floating market tours" and the like. If you want to see a floating market, go at 4AM and see a real one. The tour is a joke, and not real.
