After you stir in the rennet/water mixture, your directions say to stir well for 1 minute, cover and let the mile set at 32c for 1 hour....my question is...how do you maintain a 32C temperature during this hour? Do you keep the mixture on the burner during this hour? Please clarify...thank you!

Very nice series for Gouda Khoury. Nice shot of what's known as the "clean break" in cheese making, where you stuck your finger to check if the rennet has set the curds enough for cutting.
