Very nice series for Gouda Khoury. Nice shot of what's known as the "clean break" in cheese making, where you stuck your finger to check if the rennet has set the curds enough for cutting. In the sink with hot water help hold it at 32, towels etc over sink and pot to hold heat in. Have lid on pot
