  • @rissie771 Best way to store it is either in a tightly covered bowl or sealable plastic bag. At room temp you can store it this way for about a week, a month or more in the fridge, and indefinitely in the freezer.

  • If I were to frost 24 cupcakes, how much of the ingredients would I use? And also, I plan to pipe on swirls with a 1M Star Wilton tip, so what kind of consistency would I need the buttercream to be in order to pipe on swirls for a moist chocolate cupcake?

  • I am still trying to re-educate myself after moving to Florida. It can be very difficult to frost a cake here in the summer. The frosting often melts or separates and, with layer cakes, the top layer slides off. I am having better success now by adding corn starch and egg whites to all frosting but I am sure I have a lot more to learn. Years of experience up north just don't cut it.

    I saw your buttercream recipe firstly can i ask what consistency that was it looked medium see i need it to be stiff to make roses how do i adjust it to make it stiff is it by adding more sugar? second question your recipe was for a cake i.e 22 tbs butter 2/3 c crisco, if i needed this to make 16 cupcakes including enough buttercream for roses on each what would the measurements for the ingredients be? thank u thank u

  • @mizzgee84 Add less liquid for a stiffer consistency, it's easier to make frosting thinner than thicker :)

    You can cut the recipe in half and that would be enough for 16 cupcakes.

  • I was just wondering what do you do with all of the cakes and stuff you decorate? My family won't let me decorate that often because then they end up eating it all and then they complain about it. So I was just wondering do you freeze them for later or do you seel them?

  • @Hannahrocks987 lol-at first we were eating them but then I started giving the cakes away, to family, to co-workers, to bookstores. You can also practice on other things, the backs of cake pans, etc, doesn't always need to on a cake.

  • This recipe will crust, as long as your house isn't REAL hot and humid. And you don't need corn syrup, just use the cream to thin the buttercream.

  • Check out my video on how to make buttercream. Once all the sugar is in the buttercream is usually very thick.

  • Thick for roses and thin for icing a cake. I have several videos that might help :D

  • how do u get your icing not to streak when u color it? when i color the icing its not the true true color...i hope u know what i mean. do i need to add more powdered sugar? Its kinda runny looking when i spread on the cake.

  • If I want it to all be the same color I just stir it really well. But I actually like there to be more than one tone in my colors :D

    Cut down on your liquid to start, don't add any until you see what your consistency is like. If it's still runny without the liquid then definitely add more sugar until it reaches the proper consistency.

    I got some questions about the buttercream: 1) how long it will hold on a hot day? 2) can I keep the decorated cake in the fridge while it waits for pick up or for the party? 3) does it all applies to your "peanut butter icing" too?

    I have tried your yellow cake and buttercream recipes and it all worked very well.

    And, please, keep giving us videos, all of them, all the cakes. Thanks!

  • 1) in the shade indefinitely, never tested in full sunlight

    2) don't keep the cake in the fridge, condensation forms as it comes back to room temp, might cause colors to run or the frosting to melt and sweat

    whats the best things to do with a medium consistency buttercream?

  • Hi there, if you click on my name you can see my other videos, my recipe is posted there. I wish I could give you a rough recipe for each consistency but like I say in the vidoe, I rarely make it the same way twice. It has so much to do with temperature and humidity, and you learn more the more you make it.

  • SeriousCakes: I want to make an orange cake (that my family loves and I normally make it with orange cream cheese frosting but it is too soft) for Mother's Day with a basketweave, but I really would like to use a cream cheese frosting. Do you think I can use your cream cheese frosting recipe for basketweave? Would it hold up? Or, should I play it safe and use your buttercream frosting. Thanks for your help.

  • Definitely, it's a very easy technique! Do a few on a plate first just to get your bearings though, then on to a cake or cuppie :D
