If previous generations weren't over weight do you really believe that it is because they sat on their backsides eating bacon? I would love to know where Dr Whiting gets the idea that vegetable oil causes billions of free radicals which will prematurely age my skin and give me heart diease.
If you will simply google the dangers of polyunsaturated oils you will find hundreds of studies establishing the ability of these oils to generate free radicals as a by product of oxidation. The generations of the early 1900's were virtually free of heart disease. In fact, there was no dept of Cardiology in any major university before 1911, because it was unnecessary. Heart disease is the result of modern diet, and the drastic change in our sources of oil comsuption.

Can you make the claims you make based on this evidence? What about evidence in favour of PU oils? Before 1911 were there the diagnostic tests or treatments available today available then? Would someone have a bypass operation, pacemaker implanted or an echocardiogram in 1911?
Yes, Yes, Yes, PU oils have their benefits, but only if oxidation is can be prevented, which is almost impossible. Not to the same extent, but heart attacks were very rare. No, because the need was so rare.

you forgot to mention that mediterraneans also eat alot of grass fed meats and lards. they also don't go on low cal diets, of course that might be changing as they learn the myths of cal in cal out garbage or paradigm people can't seem to let go. people get stuck in a rut (cal in out weight control) and can't seem to grab the robes of freedom that sit right before them now that would get them out of the deep hole of myths.

I do notice that if I cut out red meat entirely, I feel a little weak. I find I have to have at least 4 oz of red meat a week (but I try grass fed organic at least). I dont eat much of other types of meat. Fish once in a blue moon and eggs once a week (I guess that can be considered meat).
Omega fatty acids are certainly essential. Saturated fats have received a bad rap for so long that the brainwashing has turned the myth into fact... too bad for us.
However you forgot to mention macadamia nut oil,its higher in monounsaturated fats and lower in polyunsaturated fats than olive oil! But still olive oil may be healthier because its high in diffrent antioxidants.

I concur with most everything said. However, note that olive oil is still comprised of 13.5% PUFA. I even avoid this as most sources of saturated fat have good ratios of saturated to monounsaturated fat:
butter- 7:3, beef- 6:7, etc.
One should try and avoid the fats of non-ruminants: pork, chicken, turkey, etc. These animals are fed diets of corn, soy, etc. and because they do not have a rumen to destroy these fats, the PUFAs manifest in the fat. grass-fed beef tallow all the way!

I eat organic olive oil and organic butter as my primary sources of fats (with a little coconut oil and much less canola oil). Like the doctor says, I avoid vegetable oils like the plague.

It was, you can pan fry in olive oil, but for deep frying you need to use avocado, peanut or of course old fashion lard.

Olive oil is safe at lower temps. Olive oil will smoke if heated excessively high. For those cooking conditions we recommend either canola or lard.

For about 2 years I've cut out as much refined sugars and flowers and I've cut out all vegatable oils. I cook with butter sometimes, coconut oil (cold pressed) and cold pressed olive oil. I also dont fry anything anymore. I've also gotten rid of teflon and aluminum pans and now use stainless and cast iron.
Oh and I've increased raw walnuts and almonds in my diet as well as an avacado every other day and I've lost fat and gained muscle since...my heart rate has lowered too! Good fat is great
