  • @radarbrew No, I don't know why I said halibut... Halibut is a white meat. I must have recently gone halibut fishing and had halibut on the brain haha.

  • It turned out awesome. We smoke salmon every year, it makes great dip and sushi :)

  • sushi is raw not smoked

  • Correction, raw fish alone is called sushimi not sushi. Sushi typically is rice mixed with rice wine vinegar and rolled with nori (seaweed). Various types of sushi use different ingredients rolled into the sushi roll. Smoked salmon rolled into sushi accompanied by carrots, cucumber and a little cream cheese makes a really tasty roll!

  • Envy is a sin, and you're the root cause of mine right now. I'm an American living in Germany, and I grew up by the sea in Virginia. I miss my fish! But nothing beats smoked salmon (something not available in VA, either)!

  • After vacuum-packing the fish, do you refrigerate or freeze it, or can you store at room temperature? How long does it keep?

  • I usually freeze it. I'm sure if you vacuum sealed it it would last a while in a refrigerator, but freezing it, it will last for a really long time. I have smoked salmon that's several years old. It makes good smoked salmon dip or sushi!

  • the metalic rack and bowl react with salt from brine, will impart metalic taste in fish, never use metal inc. wooden fork.

  • That's an interesting tip. We smoked a lot of salmon using metal racks and I can honestly say I never tasted any metallic taste.

  • I can smell the smoke over here. Great video enjoyed your patter and watching Grandpa doing his bit.The black smoker with the gravity fed biscuits was it a Bradley, seen them advertised over here thinking about buying one.Happy smoking.

  • Be proud Alaska. You farm salmon. 2 billion hatchery fish a year. Now how can you say they are wild? They are fed the same as farmed salmon. With the same so called "food colouring" "medication" and "raised in net pens"

  • I'm not really sure what you're point is, or what you're getting at but just FYI all of the fish I'm smoking in this video I dip netted myself right out of the river these fish were born in and spawn in. Can't get much more "Wild" than that.

  • To tell you the truth I don't know a whole lot about farm raised salmon. All I do know is that the salmon I catch in Alaska is amazing, so not to be bias but I'd have to say Alaskan Salmon is the best :)

  • Hmm... makes me want to live in Alaska. Do salmons live in lakes or rivers? I'm a bit concered about the sanitation of MN lakes.

  • They spend most of their time in the ocean but spawn each year to the rivers they were born in to reproduce.
