I know exactly what's happening. You see, soy milk is high in protein and when proteins are exposed to denaturants, they get denatured. In this case the denaturant is acid, the pepsi/coke since these drinks are known to have a pH similar to that of phosphoric acid. When the soy proteins get denatured they become solid explaining why there are solid particles in the mixture. The middle layer of the mix is just pepsi/coke that has been decolorized by the denatured proteins absorbing the colorant.

Anyone that has a baby that drinks Soy milk knows that Soy milk spoils REAL REAL fast, like hours. I am assuming the coke is just speeding this process up, and the spoiling causes some chemical reaction.

its depends on the brand, and what you intend to use the soy milk for. Plain soy milk has a chalky soy flavour like plain tofu. I prefer soy milk flavoured with vanilla for a beverage on its own , or with my cereal. you should try, you might be pleasantly surprised

My guess is that Pepsi is more acidic than Coke is, due to the faster reaction.

About the smell, maybe the proteins in the SoyCoke mix were only have seperated or something... I dunno. Cool. ;D
