It's been awhile since I played this game so I can't really be more specific, but if you can't do it from the main menu, try doing it from the quick select menu. Hold the appropriate shoulder button (R2) and see if you can change ammo type from there.

a good way to defeat the beauties via stamina is too use the solar gun yes (where is the fun though lol) but if you have it lay down and the beautie will do the same, while laying down she wont be able to dodge so two full charges of the solar and its done like that or use that strategy for any other non lethal gun
