  • I BBQ chicken professionally and I have to say... this is not the proper technique. It may be descent but I recommend basting first as well as turning that down to 225 degrees until the center of the chix reaches 165 degrees. 250 is too high.

  • @CURIOUSSERA depends. there are different techniques which produce different results -- rubs, marinades, injections, bastes. You (generally) would not marinate a chicken, then inject it, cover it in a rub, and baste it with sauce towards the end of the cooking period. You pick one or two methods and work from there.

  • Try using a kitchen scissors to split the chicken next time. It's easier. I use a scissors to remove the claws as well. It's also alot faster.
