  • the term butt means large end

  • 3 pnts...A meat cutter uses a 6-8inch knife blade for a reason and it's not to use only the first 1 1/2 -2 inches of the blade lol and second what he pointed out as *country* style ribs were actually riblets off the picnic *poor mans* sparerib...country style refers to how the sparerib is cut..also he missed removin the gland from the belly and leg of the pig:D
