While Sabretooth is stronger than Logan, Logan actually has more experience and skill. Sabretooth has always relied on pure instinct, and his physical raw power to win fights. While this is obviously quite the attribute when you look at him, you have to realize Wolverine has a comparable beserker instinct as well.

Basically Wolverine has mastered his beseker instincts and can keep a smarter head in the fight than Sabretooth. He fights as a beast and a man.
