Well, what if you put different toast setting, maybe you wanted to make it crunchier or less then you can abort over or under toasting it with the help of that button.
In the manual: "Warning: You are about to make toast. If at any point in the toast making process you feel you are not qualified to make toast, please press the emergency toaster abort button."
I use the cancel button to stop the toast when it reaches the *Perfect* level of toastiness b/c the charredness knob works for shit.
