  • @Bizz2k Yeah its called an egg poacher. Or you can use metal cookie cutters in the pan to keep the egg together. But they make special egg cups for poaching.

  • to people arguing whether it's the right method or not, it looks like the method worked just fine for him. You can poach eggs in saltless water, water with no acid, hell you can poach them in hot beef tallow if you want

  • @Eloades11 Dude seriously, the salt will make the egg white go to crap, I used to wonder why I couldnt poach eggs properly then I found out it was because I was putting salt in the water, go ahead do it and see for yourself. You dont need to use vinegar but it works better if you do, it wont make the egg taste like vinegar, put the salt on after the egg is cooked. Same with scrambled eggs, they come out better if you dont put salt in them while they are cooking.

  • i've always cooked my poached eggs with a runny yolk, and i boil it for 2-3 mins, and 4-5 mins for a hard yolk, at 1.5 mins the white's are under cooked i also use free range eggs...do you use a higher temperature?

He spun the water way too fast and he should have dropped the egg more in the center of the vortex, not on the outer edge. Plus most of his videos are stolen to the T from Chefs like Gordon Ramsay.   • This is exactly the correct way of poaching eggs at home...making the vortex in the middle of the water allows the egg whites when dropped, to wrap around the yolk, to make a cone shape, in the restaurant where I work, we get really busy for breakfast and people order poached eggs like crazy, so we just use a hotel pan with water and vinegar gently simmering, and they just drop the eggs directly in, so they can do up to 10 at a time.

  • Nicko, have you tried using a frying pan with rings (used for frying eggs on the bbq) in simmering water?

    You use far less water and can cook 4/5/6 at a time depending on how big your pan is. I can't see it tasting any different.

  • @johnstonalligator Well cooking is all about preference basically. Like some people don't like vinegar, and prefer salt. Some people like their eggs scrambles as opposed to sunny side up. There's not really a "wrong" way to do it. If there was a wrong say to cook, then different recipes for open dishes wouldn't exist.

  • @Tyndallist You really dont get it do you, its not about taste preference its about cooking a poached egg with the egg white in a nice neat ball around the yolk, if you put salt in the water it causes the egg white to go thin and all over the place, if you put vinegar in the water it has a coagulating effect on the egg white and the result is a well cooked yolk wrapped in a nice firm well textured egg white. I hope you are not too proud to concede that putting salt in is the wrong method

  • First, you don't use salt, you use vinegar because the acidity causes the white to coagulate faster; salt does the opposite. Second, you called it "boiling water". You would NEVER poach an egg in boiling water because it would overcook and be destroyed by the movement of the water. It should be barely simmering water. Finally, you spun the water waaaaay too fast. I guarantee the egg at the end was not the same egg he dropped in. Frankly, you don't even need to use the vortex method.

Boiling and simmering are very different states of water temperature and knowing the difference is vitally important to poaching. Vinegar works as a coagulant, salt does not. Good chefs thrive on criticism. As should all professions. Do you want your doctor going through med school without critique? Grow up dipshit.

  • Just did it but I used a couple TBS of vinager instead of just salt. I will try the just salt way later. I swirled the water, not a malestrom like you did, and it worked just dandy. I plopped the egg in the center though and turned the heat up just under boiling and left the egg for 4 minutes and it was perfect. Hope that's "eye k-eye" ;-D

  • Thanks for this video, never tried making a poached egg by using the whirlpool method. It came out great, I also used wheat toast. Didn't have any garnishments, but it came out great.

    Haven't tried it, but wonder what would happen if I tried two eggs at once? Maybe tomorrow I'll give it a go.

  • I tried swirling the water, but the egg only moved to the outside of the pan and still resulted in a disaster. Maybe I had the water too deep? Also, I tried cooking the egg for 3 minutes and the yolk was still runny. I like mine close to set. Like a medium cooked egg, just barely firm but kind of gel like. This way you still get the delicious yolk flavor without it running all over the place.

    I just used this method (it turned out amazingly) and for the second egg I used the same water, after taking the first egg out.
