It was DELICIOUS! I risked it by adding two cloves of diced garlic but it was well rewarded in the end. Don't forget to keep mushing the turkey mince otherwise it will clump together. Thanks again for another delicious recipe Chef John ;)

I was in a time crunch, so I couldn't let it cook the full 30 minutes, but it still turned out great. In hindsight, I should have,

1. More cayan by the end, it rinses off

2. Kept mushing the turkey, it has the tendency to bunch up

3.More onion.

Also, adding some barbeque really, really pulls this dish together.
