I thought the best way to lay wall tile is to start in the center of the wall and go out to the sides, not from a corner

It is not OK to use regular mastic for installing tile to a wet area. Also, it's important that there's a moisture barrier and cement backer behind tile walls. You want to mention so no one gets the idea it's OK to skip that step, either.
