hmm.. my grandpa is from sicily and he makes his family recipe.. and his is completely different.. his are big too.. and have air pockets so the cream is completely inside.
@christaleightm ~ i want your gramps recipe?? nanee7777@gmail.com ~ I want to learn to make awesome cream puffs like momma....but she is in heaven now ...
the mixture of the puff must not be hot before u put the egg,,, because the egg will be cooked by the heat in the mixture.. for the filling we use milk instead of cheese!
what wud be d alternative of ricotta cheese??? or is it ok if i don't put cheese on it? also cud i use cream cheese instead of ricotta?? ahhhh... im starving of cream puffs lol
lol. i'm planning to make this.. damn.. nakita q kc sa costco ung cream puffs and it looked good but 2 expensive tho. kea aun. home made n lan.. i was planning to surprised u p nmn.. i got caught! y r u so damn smart wen it comes about food? lol. jk.. =P nagpapabili n q ky papa ng flour nd cheese tho. haha. sana by monday makagawa q netuh. i so want this shit!! =P
@PlayingPanda oh oh and i hope you don't mind me butting in XD but i think like riajose said of the heat and ect, the eggs may have actually cooked due to the temperateture of the cream puff mixture :)

i got a question for ya... (about puff pastry)
1)how long it takes to make sure the mixture forms a ball at the top of it..?
2)did u break the egg after u remove the saucepan or u let the mixture cool first, then u add the egg?
thats all...hope u reply me immediately...thanks for the recipe

Maybe it has something to do with the air humidity or something. Or the heat of the pan.

I know, may be she meant 350F.
350C is just crazy, and do you know how much is 350F into Celcius.
I never learned how to use F I always use C ...
