@durgaaa because for some recipes yu want chopped chocolate, not melted (such as making a ganache) also many baking chocolates that recommend that yu melt in a microwave arent very high quality, and for a ganache yu want really nice chocolate
@tinalinlina -- can you give a List of high quality chocolate names? I guess "Bakers" is not very high, right? chopping chocolate takes a special knife and method or you cut yourself and chocolate flies everywhere.
to avoid the knife slipping just hold the tip of the knife down carefully not to cut yourself and then use the hilt of the blade to cut the chocolate, its either that or use common sense and cut the chocolate block in half or break it in half or use the grater to get nice chocolate shavings, theres many ways to do this xD
The best thing to use to break apart large pieces of chocolate is a rolling pin being hit on top of the chocolate brick in a ziplock bag or any plastic bag you have. You can even break chocolate easily by hitting it on the floor. Remember, it is in the plastic bag... you wont get it dirty. I really don't like using any knife for cutting chocolate.

Why would melting the chocolate in a micro wave not be just as good for a recipe ?
