you should be using vanilla extract and not essence which is created in a lab and contains no vanilla at all. but the other ingredients are good and it is a really good recipe thanks for posting it.
by the looks of it thats a pan on the stove, the chocolate is being heated lightly thus cooking the egg whites buddy =)... notice the pot of water, then the pot of choc on top? you place it like that so steam heat melts chocolate, youd ont want the water or rawr heat on the pan or you will either burn your chocolate or it will bubble really nasty.

Glad you liked it - and it is as easy to make as would appear - if you want it less rich, try cheaper cooking chocolate, but you do comprimise on the quality.
