Shred/grate potatoes. drain in paper towel. best results are to put a cookie cutter in cast iron pan, put oil in the cookie cutter with pan hot. put hashbrowns in the cookie cutter. brown on each side flip by flipping the whole cookie cutter with hashbrowns in them. when you flip the final time, remove cookie cutter, throw cheese and jalapenos on top. ALways use oil because butter burns too much at the temp needed to crisp the hashbrowns. for flavor throw butter on in the final 2 flips.
