You were doing great until you mixed it with a mixer. Never mix muffin mix that much! The secret of fluffy muffins in to barely mix it. I'm talking three turns with a wooden spoon and that's it, even if you can still see dry ingredients. They will be absorbed during the cooking process. I just love muffins and choc chip muffins are my favorites!
