I stay up with the camera all night, wander around, listen to some music, sit in the car if it's close by or pull up a comfortable rock and enjoy the night air and views of the dark-site stars.
With the camera/lens combo I have, for this one I shot shutter speeds of 30 seconds, ISO1600, F/3.5 at 18mm. At ISO 1600 it can become very noisy, even though it is more light-sensitive.
However, even though ISO 800 might be less noisy, you may have to stretch it more.
For anti fogging, you can take the pain of wiping your lens VERY gently between exposures (tedious) or you can buy a dew-strap heater and controller. you will need a power source. This wraps around your lens and keeps it warm to stop the condensation from forming on the glass.

Hello, thanks for amazing video.
Do you leave your gear while shooting? Or do you set up a tent and spend the night?
Also, how do you deal with fog or moisture on lens? And what ISO/f-stop/shutter speed do you shoot at?

You should try to merge several night timelapses to one big movie.

Nope. Just set it and make sure you have enough memory on either a card or on your laptop to hold them all.
