That water is distilled, it's not boiling. Distilled water (pure H2O) can reach temparatures above boiling point but won't boil unless you have foreign matter in it so it actually starts boiling in mid-air and vaporizes.

Boiling water would never freeze into a solid that fast. All you are seeing is the steam from the boilng water quickly cooling, its not freezing into a solid, not that fast. Duh. Do the this over pavement, you'll no longer act like a kid in a candy shop. Notice how wet the pavement get's from the LIQUID water falling to the pavement.
