  • The best damn ribs iv ever had were when i got a rack of spares and braised em in Dogfish head's chipotle porter and a healthy dose of Johnny Walker black and some brown sugar and an pork orientated bbq rub. Cooked for about 10 to 12 hours, could not pick up the rack with out it totally falling apart on its self! Got a three pound rack, me and my friend pretty much had to fight each other over the last few ribs it was that damn good.

  • Very nice. I get baby backs from Costco but I've also done spare ribs. Brining the ribs for a day or so seems to make a big difference. So many great ways to do ribs. I have a honey apricot glaze I use on slow cooked oven baked ribs that comes out pretty tender and tasty. My favorite is to put them in the smoker but my girls like ribs slow grilled. Thanks for a great video!

  • That section that's chopped up, is used by Todderman, to make McDonald's Pork Rib sandwich.

  • Hi Jack; good video. I take off the white rib membrane though. It cooks more tender and the rub or sauce gets into the meet better. Just take a spoon or knife and cut under the membrane of one of the ribs on the short end. Take a paper towel and pull it off. thanks jack

  • Here in Denmark everything is SO expensive. If i buy Spare ribs at my butcher it is 53 DKKR pr. Kg or 3$ pr. pound!

  • Jack, when I trim my spare rigs the tips and ends I save to go in my Chili Verde. Comes out to 3 more meals off 3 racks of ribs.

  • U forgot to take the membrane off, the method of cooking the meat on high temp to keep all the juices is for tri tip! There's a lot of bone inside to do that. I learned about diff types of ribs but that's about it. Cooking wise.....idk not really

  • Jak, don't know if you are aware, but Todd Wilbur, (you did a review on his cloning books), uses that part you cut off to clone the McDonald's McRib sandwich. He has a vid on youtube here showing how it's done. FYI, I started buying his books because of your review, and let me tell you, I've made some AMAZING dishes.

  • Pork spare ribs are very good.. but most of the time they have a lot more fat on them than baby backs.. Therefore if you have the money baby back is were its at! ;)

  • Help! when I do baked ribs, do I put it for 3 hours in 250 degrees celsius or Fahrenheit? or some other temperature scale? And is it in the middle of the oven with top + bottom heat?

  • @PAMAROSHOUSE I never do baby back for that reason. Mine have 3 times the meat. It's such a rip off and myth that baby backs are better.

  • Jack, My grill just died. I just bought the pork ribs at Vons, and now I was wondering if I can cook these in the oven, and what temp, etc.

  • @gorillamyke 250 degrees F for 3 hours wrapped in foil. Unwrap the foil the last 30 minutes. The bone will slide out. Here is a video I did on oven cooking the ribs. Watch the lower quality video. The HQ one doesn't work. Youtube screwed that one up. I will msg you the link

  • @toix48 any membrane is going to fry away on the grill anyway. I have never done that in all my life and they taste amazing.

  • @Reddogbn if you tap two eggs together, one always breaks and one doesn't. It's a known fact. Unless you smash them together. Just tap to crack.

  • @majorenDK dude its BBQ ribs, its not about health its about taste.

    But to answer your question.You lose fat with both cooking methods. About Vitamins... they mostly die in both processes. Some people state the smoke from grilling to be carcinogen. I just remember that open flames have been the only cooking methode for centurys. Now if you want to be complete healthy, steam them. It keeps the taste, but your missing the grill flavor. Its still better than boiling them tho....

    in norway we can buy already marinated spareribs, not even half the size of that piece you prepare here. it cost everywhere from 100-200 NOK per packet, which is two tiny racks of ribs. thats about 17-35 USD (100-200 NOK) you have cheap food in the US. compared to Norway atleast

  • hey jack! Im from singapore and there is a pork rib soup called bak ku teh, is a soup made of herbs and spices and the meat is also great! you could goggle it or something. but some asians cuisines does boiled the ribs. just a fyi

    BTW, i dont have a grill... only an oven and pans... is there a way to cook them like that?

    if you have a broiler flame then:

    wrap in foil and cook at 325 for 2 hours. Then unwrap and broil both sides to a nice brown.

    If you don't have a broiler flame then:

    wrap in foil and cook at 325 for 2 hours. Then unwrap and cook at 400 for about 20 more minutes to get browning on outside.

  • @brewersrock98 flip the rack once the one side had good grill marks and all is browned on the outside. here should be no pink.

  • really good vid jack, but even though st louis ribs are more per pound, they're a lot lighter so it kinda works out cheaper in the end.

  • @yorgishmorgis throw on hot grill and cook outside quickly. the inside is not cooked just yet but the outside is done. Drop the flame to low and slow cook the inside the rest of the way. it works flawlessly

  • @repyilecray8 you can bake them at 350 for 2.5 hours. You can broil them, and you can even slow cook in the crock pot.

  • Hey Jak, y'know what would be a good episode? Making boxed Kraft Mac n' Cheese, BUT you cannot take anything out, you can only add things. I've done it with cheddar and mozzarella in addition to the "cheese", it was quite good.

  • I like to see how other people cook. In my family we never serperate the rib cage from the "top" portion. We always cooked it as one piece and when we sliced the ribs.... there would be some that were 80% meat.. (My fav ones lol). We also always use a cheap home marinade. Oil, water, lemon juice, a lil viniger, and spices with cut up onions.

  • hey jack i have a question about your boiling ribs thing, i dont boil my spare ribs, youre right about that, but i simmer my short ribs in a crock pot with sauce and they are to die for. they fall right off the bone and have amazing favor. can you explain that?

  • @boogster123321 because you are cooking the ribs in the sauce. then serving. The pork boiling removes the fat from the ribs into the water then the water gets dumped out. flavor gone. Your beef method leaves the flavor with the rib via the sauce it cooks in.

    BBQ Food tastes best when its served on paper plates. It adds to the experience and the flair of the food. Food taste doesn't only consist of aroma and texture ;)

  • You should do a show on how to prepare a dry rub, maybe make home made sauce and how to smoke a rack of ribs. When we make ribs we make our own sauces and rub. It's way better. We cook Memphis style. Btw, Awesome Show!

  • @dawnmarko1 do you use a vinegar base bbq sauce with probably hickory or smoke in it, right?

  • @jakatak69 Our sauce has a little apple cider vinegar in it. I can send u the recipe if you want to try it. The rub has paprika, onion powder, chipotle powder & sugar. We use chunks of wet hickory over gas flame to smoke it. I've heard south eastern bbq is different than western bbq. Is it?

  • @dawnmarko1 here is what I have found out. if your from texas, louisiana, kansas, oklahoma, and some parts of Missouri you like the vinegar based with hickory or smoke in it.

    if your from the north, west or very east coast you are into the sugar based sweet bbq sauce that caramelizes to the meat.

  • @jakatak69 I'm from Florida. Most ppl here do like a sweet & spicey sauce. Our sauce has vinegar in it and brown and white sugar & no smoke flavor. It's not too sweet but very zesty. You can't brush it on till about 5 minutes before you take it off of the grill.

  • @skatersirian Why does everyone think I eat what I make? Ribs are bad to eat. They are protein. I did give the whole rack to my neighboor after shooting the episode.
