WOW what a tree....and WOW that smoker attempt looks great, It's something that I've never had a go at. I would like to have a go at making some Jerky. The mut seemed to be enjoying himself and not that interested in the Salmon lol.....
No it looks like natural dry rot. Bugs probably played a part in it but I don't think they would have caused it. Cedar is also very prone to core rot which is strange because cedar wood is very resistant to rotting.
LOL! I'm gonna have to say that further research is required on that one, my first impression was that it looked safe. When I get back there I'll look into that though.
I do smoke/cook my salmon at the side of the fire (Ray Mears way) but I don't slice it since I buy thiner pieces. You might speed up smoking process if you cut it on even smaller pieces.
If you have a video or you have the Ray Mears vid handy could you post it as a reply? I am going to try this a few more times after I do some more research. Thanks!
P.S: the ironic thing about this is that I have a commercial smoker that can do 500 pounds of product at once in my shop and yet I still have to sit by a fire and "play". :P
