  • I love Good Eats but I kinda wish he woulda went into seasoning the a bit better. gotta season the fish AND whatever you choose to bread it with. He hints on it, but it is vital that you add some seasoning to the flour/corn meal mix. At minimum...SALT. Otherwise it has a strange bland dough flavor to it. Mr. Brown has forgotten more about cooking than I've ever known, just saying, I DO know that much & someone that doesn't will be disappointed.

  • I live in Mississippi, and that looks like a great catfish fry. My iced tea is unsweetened, and they have it, because so many in the south drink unsweetened iced tea, too. Tabasco is on the table.

  • My favorite way of eating catfish is to have it whole deep fried so the exterior is crispy and the inside is nice and soft. Dipped in nuoc mam (fish sauce) mixed with lemon juice and sugar and eaten with rice mixed with butter and soy sauce=perfection
