This seems laboured method. It appeared as though the rabbit hadn't been gutted first too.(?) I was always taught once killed, squeeze out the wee, then gut, then stick the knife through a leg (between the tendon & bone) the opposite foot through... then skin.

This is exactly the same way I've been taught to skin a rabbit solo more than 20 years ago when I was a kid. Brings back memories, especially from the sweet old man that taught me to do it, and who was almost a grandpa to me.

All you do is chop the head and feet above the knee joint off, cut a hole in the middle of their back big enough to put your fingers in and pull the skin, rip it apart. It's the easiest and cleanest way to keep hair off the meat. Then carefully split the belly skin not to puncture the guts and cut up thru the ribs, make a Y thru the groin to remove the anus and voila. Takes like 5 minutes. Soak it in the sink in COLD water for 4 hours.

Much easier if you lop off the front feet with shears before skinning. The head should be removed 1st so it bleeds so the meat isn't tough. Take a stick, lay it over the back of the neck with the rabbit on the ground, step on it & yank the back legs to dislocate the neck vertebrae. Head comes off with one easy knife swipe. Cut a circle around the anus so the intestines can slide in and out of the hole, when gutting pull the intestines out thru the abdominal cut. No poo on the meat then!
