oh i dont know how to thank you , looks very yammi , its little bit diffirent , you should add around 2 tsp of flour mixed with water to make it thin , we use semen ( gharam ) in the end as well , but i am sure that your harira is very yamiiiiiiiiiiiiiiiiiii we eat it with dates or shebakia sweet , or boiled eggs sometimes
salam titli, it is so nice to see how you cook harira finally :) i am in morocco so everyday drinking harira for iftar. here, we also refer often iftar as 'ftor', meaning breakfast(they think this is the first meal of the day. just in ramadan!) as married to moroccan muslim i learned how to cook many moroccan food, including my favorite, harira. i usually make it with flour to thicken it, but never tried with eggs. but i looks so good!! i will definately try it inshallah. thank you for wonderful
Is the 2 hours cooking time just to cook the meat? If I used sliced or diced potato instead of meat (and left out or substituted another veg for the celery) would that alter the cooking time or maybe should I add the potato later? I think that potato tends to disintegrate if boiled for too long. Or did I just make things too complicated as I've fundamentally altered the recipe :-| ???
@mickypoo4622 If you look further down, simis7 gives a nice veggie option for this recipe. The cooking time is not just about the meat, but also the pulses.
you're supposed to dissolve a tablespoon of flour in some water and add it in, also, traditionally, people use noodles, and add the egg at the end if they want it.
@theeSHXT The recipe on my website gives that as an alternative, together with vermicelli noodles. I was torn which to use, but if I'd used flour to thicken it someone would surely have said that it's thickened with egg! :-)
What did Muslim cooks do before there was tomatoes available? I've studied some Medieval culinary history because of my involvement with Renaissance faires and I found the lack of tomatoes in early Italian cuisine a little disconcerting. But how different was Muslim cuisine back then?
@Coelacanth1938 You are right, tomatos, squash (including pumpkins), potatos, chocolate, peppers (including chili peppers), peanuts and corn are all new world foods. They were only eaten in the eastern hemisphere after Columbus (1492). Also, do they have a Peruvian section in the Ethnic grocery stores there in the UK. You will find more unusual thngs like quinoa.
What is that word that you say after every video? and what does the translation mean in English? I would like to know. Thanx! Your videos are always entertaining. :)
OMG! I love harira! Yum! I make veg version. start w/onion,celery, butter. Lightly sweat then add salt,pepper,cuminP,corianderP,black pepper, Lentils, peas, water, can of crushed tomato. Cook. When 90% cooked, I add chick peas, little pasta(those lil' ones for soup), can of chickpeas. Then add (3 tbs each tomato paste+AP Flour) in some water. Add and mix. cook 5 min and its ready!
I love it. no meat no egg. Hope this gives ppl another option. I simply love your videos Titli Auntie.
@thanhyen02 Just remove the meat.
