I am doing something VERY similar for an MSc project of mine. I'm starting out looking at the interaction between a moving body and a particle injection. I've pretty much done what you've done there but in 3D. However, your remeshing/layering looks VERY nice and regular. Are there any tips/settings you could give to help? Although my mesh moves and interacts with the particles as I want, the mesh itself looks suspect.
