You actually can delete the path. Select the text and change it from an object to a path, just like you previously did for the circle. This "breaks" the text from the circle and allows you to delete the circle completely without losing the shape of the text.
I would like to comment on something you said. You said Inkscape isn't as intuitive as Illustrator and that moving the text is harder in Inkscape.
Select your circle path, click it to get the rotation handles and rotate the path. The text will follow. You can also reverse the path direction and so on.
