I saw on Wiki that it takes 6 weeks or so to get the lactobacillus benefits. So should it be left out of fridge until then, or allowed to ferment more in the fridge? Also, aside from the veggie & fruit benefits,does anyone know why the probiotic benefits from sauerkraut are any more beneficial than those from yogurt & kefir - which are way easier to make? (Take a spoon out, toss it in milk & let sit overnight, for ex.)
A nice clean kitchen. So many of these sauerkraut people get pretty medieval and grungy when they make kraut. This gal makes it look easy and offers great tips -- I'd definitely eat this kraut. Thanks for posting!
